Masalah gizi pada anak dan remaja dapat terjadi karena kurangnya asupan yang tepat dapat dialami oleh setiap anak dan remaja tak terkecuali pada anak dan remaja yang tinggal di institusi sosial seperti Panti Asuhan Sosial Anak (PSAA). Pelatihan gizi berupa perencanaan menu gizi seimbang dan perhitungan kebutuhan bahan makanan kelompok usia anak sekolah dan remaja diharapkan dapat meningkatkan pengetahuan dan keterampilan pengelola panti. Metode penelitian menggunakan metode eksperimen dengan rancangan One Group Pretest Posttest. Pengambilan sample dengan metode Purposive Sampling.Sample adalah seluruh pengelola asrama yang dapat berkontribusi terhadap mutu layanan makan penghuni PSAA Akhirruzaman. Tujuan penelitian ini adalah untuk mengetahui perbedaaan pengetahuan dan keterampilan pengelola panti sebelum dan sesudah pelatihan metode ceramah-tanya jawab, simulasi, dan penugasan.
Hasil penelitian sebanyak 40% peserta pelatihan dengan golongan usia dewasa tua, 50% dengan tingkat pendidikan rendah, dan 90% memiliki pengalaman kerja >3 tahun. Berdasarkan hasil uji Wilcoxon disimpulkan bahwa ada perbedaan tingkat pengetahuan gizi seimbang sebelum dan sesudah pelatihan (p 0,005) , tingkat pengetahuan perhitungan kebutuhan bahan makanan sebelum dan sesudah pelatihan (p 0.026) , keterampilan menyusun menu sebelum dan sesudah pelatihan (p 0.005) dan keterampilan menghitung kebutuhan bahan makanan (p 0.002). Tidak ada perbedaan pengetahuan perencanaan menu (p 0.065).
Dengan pelatihan ini diharapkan peserta yang mengalami peningkatan pengetahuan dan keterampilan dapat dijadikan koordinator mutu layanan makan penghuni PSAA Akhirruzaman.

Differences Knowledge and Skills of Orphanage Managers Before and After Nutrition Training About Planning Balanced Nutrition Menu and Calculation of Food Needs in Akhiruzzaman Orphanage in Bekasi.

Nutrition problems in children and adolescents can occur because the lack of appropriate intake. It can be happened with every children and adolescent, including in children and adolescents who live in social institutions such as Children Social Orphanage. Nutrition training about planning balanced nutrition menu and calculation of food needs for children and adolescents is expected to improve knowledge and skills of orphanage managers. The research method is experimental method with One Group Pretest Posttest design. Sampling with Purposive Sampling. Sample method is all orphanage managers that can contribute to the food service quality in Akhirruzaman Orphanage.The purpose of this study was to determine the differences of knowledge and skills of orphanage managers before and after training of speech with question and answer, simulation, and assignment methods.
The result of the research is 40% trainees with adult age group, 50% with low education level, and 90% have work experience >3 years. Based on Wilcoxon test results it was concluded that there was a difference of level of knowledge of balanced nutrition before and after training (p 0,005), level of knowledge of calculation of food needs before and after training (p 0.026), skill of preparing menu before and after training (p 0.005) , calculation food needs (p 0.002). There is no difference in menu planning knowledge (p 0.065).
With this training, researcher expected that participants who have increased knowledge and skills can be used as coordinator of food service quality in Akhirruzaman Orphanage.
